  1. Bring 2qt water to a boil in a large saucepan over medium-high heat. Stir in 2 Tbsp salt and stir until dissolved.

  3. Return water to a boil. Add potatoes and cook until tender, approx 15min. Drain. Let cool approx 15min.
  4. Combine onion and vinegar in large bowl. Let stand 10min. Stir in celery, mayonnaise, chopped basil and dill, pepper and remaining 2 1/2tsp salt..
  5. Cut corn off cob. Discard cob..
  6. Add corn and potatoes to mixture. Stir to combine. Lightly smash mixture together until creamy.
  7. Cover and chill at least 1 hour and up to 3 days..
  8. Season to taste with salt and pepper.
